Mom H’s Salmon Loaves in Muffin Cups
Preheat oven to 350ºF
3 small cans salmon
1 egg
Green or red onion, chopped
2 Tbsp chopped fresh dill
½ to ¾ cup mayonnaise
½ to ¾ cup bread crumbs, finely crushed in blender
Combine all ingredients together. Mixture should be fairly moist but firm enough to be shaped into patties. Grease muffin tins. Fill to top with salmon mixture and press down. Bake for 20 to 25 minutes. Tops should be sizzling and a bit brown. Serve with a dollop of a mixture of mayonnaise, lemon juice, garlic and a bit of honey or tartar sauce

Mom H’s Baked Salmon with Dill
Preheat oven to 425ºF
1 large salmon fillet
½ cup mayonnaise
1-2 tsp lemon zest
Juice of ½ lemon
1 clove of garlic, minced
1-2 tsp fresh dill, chopped
Line a baking sheet or broiling pan with aluminium foil & lightly oil. Place salmon fillet on top. Combine all other ingredients &spread over top of fillet. Dot with small bits of butter. Bake for about 20-35 minutes, depending on thickness of fillet. This can be made ahead of time and served at room temperature. Garnish with fresh dill and lemon wedges
