Pina Colada Fruit Salad

Give friends a taste of the tropics on warm summer days with this refreshing fruit blend. For a little extra punch, you might add a splash of coconut rum.

Jellomellows

Roasted Tomato Caprese Panzanella

tons of bread, cheese, basil, olive oil, balsamic glaze and salt

Baked Artichoke Squares

The thing about these Baked Artichoke Squares is that they’re not the prettiest looking appetizer. What they lack in beauty, they make up in taste.

Macaroni Salad

It’s the best macaroni salad ever!

Breakfast waffle pancake fruit casserole

This is a great sweet breakfast treat.

Potato Skins

Mu Shu Pork

Mu Shu Pork is a perennial take-out favorite, but it's also to easy make your own with readily available supermarket ingredients. The dish is a stir-fried combination of thinly sliced strips of boneless pork, eggs, cabbage and scallions that are seasoned with garlic, ginger, soy sauce and honey and served in a warm flour tortilla with a hoisin-based sauce.

Blueberry Quinoa Parfait

The soft and tender quinoa worked surprisingly well in the breakfast parfait with the creamy yogurt and the juicy blueberries! One of the good things about making this for breakfast is that you can cook a big batch of the quinoa on the first day and then just pull it out of the fridge and whip up the parfait in a few minutes for the next few days. I am definitely looking forward to making more of these this summer!

East Carolina BBQ Sauce

For pulled pork I like a vinegar based sauce as opposed to traditional, thick barbecue sauce.  This Carolina sauce is on the thin side and has a real TANG to it.  If you feel the vinegar would be too strong for you, you can always cut it down by half, taste it and add accordingly.

I absolutely love this sauce squeezed on pulled pork and put between two pieces of white bread.  Yum.
