- and lime juice. Place 2-3 tablespoons of the avocado and tuna mixture on top of each bread slice. Sprinkle with red onion and scallion pieces to garnish. And chili powder if want spicy
- chopped ½ teaspoon salt ¼ teaspoon ground black pepper 1 tablespoon fresh lime juice 4 slices bread Chili powder (optional) Preheat oven to 400 degrees. Place bread slices in a baking sheet and bake for about 5 minutes or until golden and slightly crispy

- peeled and mashed 1 (4 oz) can tuna fish 1 tablespoon red onion

Roasted sweet potato wraps with carmelized onions and pesto

Great for lunch or dinner, freeze well for easy leftovers. While these seem labor intensive, they work out great for pulling out of the freezer later and having for an easy lunch or dinner.
