Zucchini Rice Gratin

It’s hearty and very fall/winter-ish; it would be great on a Thanksgiving table. It involves wild rice, greens, caramelized onions, a nutty cheese and breadcrumbs and it makes a spectacular amount of gratin. When we make it at home, we reheat it for a few nights as a dinner side-dish and everyone inhales it. It’s warm and filling and I hope you will love it too.

Easy Bacon Cream Cheese Roll Ups

This may sound strange, but don’t judge until you’ve tried them. I made them for our Super Bowl Party in January and they were a crowd favorite! Everyone kept saying, “HOLY COW… what is in these?!!?!” and my response surprised every. single. one. of them. Nobody could believe it was a 3 ingredient appetizer!

Chicken King Ranch Mac and Cheese

This recipe is from the January 2012 Southern Living magazine.  I made a note to try this back in January, and I am kicking myself for waiting so long.  This was SO DANG GOOD!  I mean really, really, really good.  I want to eat this every day! This makes enough for about 6 people.  We ate it for dinner and I ate leftovers for lunch.  It was just as good reheated.  I could eat this every week.  I can't stop thinking about it!  Make this ASAP; I promise you will love it!

 I made this bread slash cake slash cake slash bread right before I left on vacation. So I had to like, eat a lot of it so it wouldn’t go to waste. And about halfway through, I just started scraping at the bottom with a fork, devouring all of the caramely and sugar-crusted bananas.

This was a wise, wise choice my friends. For once, I did something right.
