Pineapple Cake "Using Cake Mix"
Description
Ingredients
- 1 box yellow cake mix, using directions on box
- 1/3 cup sugar
- 3 eggs
- (whatever else ingredients on box)
- 2 egg yolks
- 2 tbsps cold water
- 1 1/2 cup sugar
- 3 tbsps corn starch or flour
- 1 can crushed pineapple (small can)
- 2 tbsps butter
- 1 tsp lemon juice
Instructions
Mix together yellow cake mix, 1/3 cup of sugar and three eggs. Make as directions on box. (This is the directions on the recipe I found, it doesn't mention, water or oil, but it said to go by directions on box)
DON'T use Duncan Hines Butter Golden cake mix!
Filling: Mix 3 heaping tablespoon of flour with 1 1/2 cups of sugar. Add the rushed pineapple, lemon juice, and cook in a heavy boiler on low to medium heat until thick, add butter and vanilla at this time. Spread between 2 layer cake, which has been divided into 4 layers before covering with Seven "7" Minute Frosting.
Notes
This is a handwritten recipe I found between the pages of Nell Hutchin's cookbooks.
