Christmas Cooking Baking with Joan.....2021

Joan and I began on 12/11/21 and went on for four more days. We needed cookies for our family celebrations, for mailing off to friends around the country (the result of spending Winters in Bradenton FL) and to give to Jeneve for Group Home Christmas parties.

Joan made:     5 dozen Sugar Cookie cut-outs, 5 dozen Chocolate Chips, Two 1/2 batches of Pizzelles (one was dairy free made with plant based margarine), 2 dozen Shortbread cookies with Chocolate filling and a new cookie this year, 2 dozen Pfernnuese (new this year but will be added from now on) and 3 dozen Linzer Tarts.

I made:    1/2 recipe of Whiskey cookies (5 dozen), a double recipe of Cornstarch (7 1/2 dozen), 4 dozen Butter Cookies to dip in chocolate and walnuts, 8 dozen Butter Balls, 1/4 recipe of Basic Dough to use with 1/2 recipe fig filling (STILL too much filling--I think I'll made that Date and Nut filled cookie and use the left over fig filling), 3 dozen Mirro Spritz green Christmas Tree cookies. I also had Neopolitans to bake and ice.

On the fourth day, Joan wanted to make sponge cake Petit Fors. I made the cake and instead of cutting out 1 inch squares, Joan used small round and square cutters to make shapes. We both iced and rolled them in coconut.

Thursday morning (12/16) , we set out all the tins and made boxes for mailing and trays for Jeneve to take to Gourp Home Christmas parties this weekend.

Joan and I had a WONDERFUL time baking together in the basement kitchen. It's really nice to have all the supplies and tools ready and at hand. Joan, bless her heart, did most of the dishwashing.
