Baking with Margie and Jessie……November, 2021

Margie and grandson Jessie came from Mississippi for a week. Marge wanted to make some pizzelles on the stove top, not the electric iron.

Jessie mixed Mom's recipe for pizzelles which makes a thicker cookie, which Margie wanted.  Jessie used Grampa's iron to make the rectangular cookie with the initials 'D.D.' on it. Margie used the iron that makes 3 diamond shaped cookies. She didn't squeeze the iron closed as she prefers a thicker cookie. They made a half recipe, but didn't really end up with many cookies (part of the learning curve) so they made a second recipe and ended up with plenty of cookies. They brought them to Mary's house for a gathering on the next day where everyone oohed and awwed at their accomplishment! Mary said that her grandchildren chewed on them all day. I hope they saved a few to take back to Mississippi.

 

A few days later, they returned to make some of the cheese filled cookies that Mommy always made for Christmas. They put together a 1/2 recipe of dough and both of them worked on it. I think Margie enjoyed getting her hands in it and showing Jessie how it 'should be done'. I had to get a small stool for her to stand on, so she could use some leverage to mix the dough. I had the cheese filling already mixed when they got here as letting it sit for at least a day enhances the flavor.  I rolled out the dough, using the Kitchenaid and the two of them filled the cookies, ravioli style. They ended up with 8 dozen filled cookies. Margie used the left over dough to make about 2 dozen sesame seed fingers. They took a few back to Mary and they packed a tin for the flight home so they could share them with family in Mississippi. Joan called Delta airlines to be sure they could bring them on board their flight.

Margie doesn't think dishwashing machines are necessary and she did all the dishes by hand. Jessie used his phone and tripod to film the whole experiences. I asked him to send me some stills from the videos.
