Mike Donovan's Jambalaya

Description

Michael Wheeler Donovan created this jambalaya recipe.  He would make this and put over rice.  This was one of his favorite meals to make.

Ingredients

  • 2 onions, medium
  • 1 green pepper
  • 6 tbsp butter
  • 6 tbsp flour
  • 4 cups water
  • 4 tomatoes, medium
  • 2 cups pineapple chunks
  • 1 cup mushrooms
  • 1 tsp salt
  • 1/2 cup Heinz 57 Sauce

Instructions

Saute onion, green pepper, mushrooms and pineapple in butter in large skillet until tender (about 5 minutes).  Blend in flour and salt.  Stir in water and Heinz 57 sauce.  Cook and stir until mixture comes to a boil.  Add tomatoes.  Cover and simmer 5 to 10 minutes.  Serve over rice.
