Ingredients

  • 2 fully ripened Avocados, pitted, halved and sliced
  • 2 ripe plum tomatoes, sliced
  • 2 tbsps extra virgin olive oil
  • 2 tbsps freshly squeezed lemon juice
  • 1 tbsp fresh oregano leaves or 1/4 tsp. dried
  • 1/4 tsp salt
  • 1/8 tsp freshly ground black pepper

Instructions

In a small bowl, whisk all ingredients except tomato and avocado slices.  In a serving bowl, add tomato and avocado slices.  Drizzle with oil mixture and gently toss to combine.  Serve immediately.
