Keep Your Cutting Board Clean

A study performed sometime ago determined that cutting boards may be a source of frequent contamination in the kitchen. Especially wooden cutting boards which can form cracks, crevices, nicks and gouges over time from use. And the porous wooden fibers can be a breeding ground for bacteria.

Cleaning with hot soapy water doesn't necessarily help eliminate or reduce contaminating bacteria levels. The best approach is to clean your cutting boards with bleach. Dilute the bleach in a water, and apply with a clean sponge. Be sure to rinse thoroughly to remove any bleach from the cutting board surface after cleaning.

According to the study, acrylic cutting boards are best at reducing bacteria levels, but as with any kitchen surface, you want to keep everything clean.
