Description


Ingredients

  • 1 bag Success Brown Rice
  • 1 tbsp vegetable oil
  • 1 lb boneless skinless chicken breasts, cut into 1-inch pieces
  • 1/2 cup red onion, diced
  • 1 red bell pepper, diced
  • 3/4 cup hot mango chutney
  • 1 fresh mango, peeled and diced
  • 1/4 cup cilantro, chopped

Instructions

1.  Prepare rice according to package directions

2.  In a large skillet, heat oil over medium heat, add chicken and cook until no longer pink in center.  Add red onion and bell pepper, cook for 5 minutes.  Add mango chutney, mango, cilanto and rice.  Stir well and serve.
