Christmas Cooking Baking....11/21 and 11/22 of 2022
Denielle is here for Thanksgiving week. Tumeca usually comes but had to stay home this year for a visiting cousin.
Denielle mixed the butterballs, but I gave her the wrong directions......I forgot that you have to cream the butter and sugar before adding the other ingredients. When the cookies were in the oven, they lost their shape and went flat, like a drop cookie. They didn't really hold together as they were eaten either.
We also made a double batch of Cornstarch Cookies and they came out just fine. Nellie likes to stamp them with Chrismas designs and coat with colored sugars.
I made the three cakes for Neopolitans and refrigerated them for overnight.
I then mixed the dough for Kipfuls. Denielle filled and LynD helped her sprinkle with colored sugars.
Next day, I had Nellie re-mix the butterball recipe correctly (original mistake was all mine, not hers). She blended red and green sprinkles to the 10x sugar as she rolled the warm butterballs. She ended up creating a beautiful looking, new variation of our family favorite (a good cook doesn't let the recipe get in the way. Right Mom?)
Our final cookie was the Cheese filled ravioli cookie. I made the dough, rolled it and then passed it to Nellie, She filled it with the cheese. We poked little holes with a turkey skewer thru the top and NONE of the filling leaked out. After cooling, LynD again helped with the sprinkles.
I cut the Neopolitan cake into bars and coated them with chocolate.....after messing up the first batch of chocolate by letting water get in the melted chocolate. Through that out....I hate wasting those ingredients.
I also made the chinese noodle cookie recipe, but I used Butterscotch, peanuts and water as the original recipe calls for.....they were unpleasant. Joan, Nellie and I agreed to got back to the origianl recipe of just chocolate and noodles.
